Hajime Kitayama
Owner Chef & Ramen Grandmaster
Hajime (Jimmy) Kitayama was born and raised in Tokyo Japan. Jimmy has been involved in the Japanese culinary scene over decades as a Certified Shshi insructor and Authentic Ramen Master.
He has expressed his passion for Ramen and his culinary experience here in Manten Ramen. Jimmy makes everything from scratch such as Homemade Noodles, Tonkotsu Broths and Chashu Meats in house.

We making fresh homemade ramen noodles which making in house everyday with selected flour.

The beef or pork bellly or chicken meat in ramen is commonly called "Chashu" it means grilled and boiled meat.
